Za tijesto:
15 dkg pirovog fino mljevenog integralnog brašna
10 dkg pirovog bijelog brašna
1 žlicica ulja
160 ml mlake vode
NADJEV:
250 g očišćene i na trakice narezane blitve
1 srednji crveni luk
1 žlica peršina
2 prstohvata soli
50 ml ulja (pola maslinovo i suncokretovo, ako vam je maslinovo žestoko stavite većinu suncokretovog) + česnjak i maslinovo ulje za premazat
UPUTE ZA PRIPREMU:
1. Blitvu očistite, uklonite bijeli tvrdi dio, narežite na trakice, operite i dobro posušite, ne smije biti vlažna!
2. Narežite crveni luk i peršin. Ostavite sastojke sa strane.
3. Zamijesite tijesto, i na pobrašnjelu površinu razvaljate 2 kruga, bit će vam lakše ako napravite šablon od masnog papira da znate koja veličina vam stane u tepsiju, razvaljano tijesto odrežite 1 cm više od šablone.
4. Kada se dobili 2 kruga, začinite blitvu sa svim sastojcima, promiješajte i stavite na jedan krug od tijesta, ostavite 1 cm sa strana slobodno.
5. Sada pažljivo sa valjkom prebacite preko nadjeva drugo tijesto, poravnajte i krajeve uvijte. Probušite tijesto na 2 mjesta da se u pečenju ne diže.
6. Peci u zagrijanoj pećnici na 230 stupnjeva dok ne porumeni oko 20,25 min.

Pečeni soparnik prekrijte krpom da malo odmori i tijesto malo omekša (ne brinite i dalje ce bit hrskavo), kada se ohladi na njega posuti česnjak i utrljati maslinovo ulje.
